You will think - wow that is way too much frosting. This is going to be too rich. I promise its the perfect ratio of frosting to cake.
Durango Chocolate Cake
2 cups flour
2 cups sugar
2 tsp baking soda
1/2 cup cocoa
1/2 tsp salt
2 eggs
1 cup buttermilk
1 cup oil
1 tsp vanilla
Put all ingredients into a bowl and mix. Lastly, pour 1 cup boiling water over batter and mix. Batter will be very thing. Pour into greased 9x13 pan, or 2 round pans, and bake at 375 degrees for about 30 minutes. Set aside to cool.
Chocolate Fudge Birthday Cake Frosting
1 (12oz) bag (2 cups) semisweet chocolate chips
2 cups sugar
2/3 cups milk
1 cup butter, slightly softened
1/4 tsp salt
1 tsp vanilla
Put the chocolate chips in the metal bowl of a stand mixer fitter with the whisk attachment. Combine the sugar, milk, butter and salt in a medium saucepan over hight heat and bring to boil, stirring occasionally. Let boil vigorously for exactly one minute. Pour the hot sugar mixture over the chocolate. Add the vanilla. Beat on medium speed until the mixture begins to thicken to a spreadable consistency, 10 - 15 minutes. Pour directly over the cake.
*we've used this frosting on yellow cake cupcakes or between 2 graham crackers.
